Ostrich With Mixed Mushrooms

Game on!! I have only cooked this once and I have to say I liked  it more than venison but try it for yourself.  It is a bit more expensive than beef.  It may not be something that you would eat every day, but it is worth trying.  Especially if you are sensitive to beef.   My client loved it but he has eaten bear and I am his chef.  Wild game is part of the Mito food list as well.  You can order it from a specialty butcher.  They have farms here right here in California!

INGREDIENTS

1 1/2  Tbs coconut oil

1/2 lb mixed mushrooms

1/2 shallot, minced

Freshly ground pepper

6 Ostrich fillets

1/4 cup beef stock

1 Tbs tomato paste

1/4 cup fresh parsley, chopped for garnish

DIRECTIONS

Heat a large skillet over medium heat add 1/2 Tbs oil.  Add the mushrooms and cook until lightly brown and tender.  Add the shallots and garlic and continue to cooking about two minutes.  Season with salt and pepper.  Remove from the pan.  

Add the stock and the tomato paste, scraping up any browned bits as you cook.  Add the mushroom, garlic and shallots back to the pan and heat through.  

Serve the ostrich topped with mushrooms and garnish with parsley.
