Gluten-Free Blueberry Chia Seed Jam

It is berry season  and what better way to use them than to make some jam you do not have to feel guilty about eating.  It does not have to be on your cheat day! No added sugar and a little fiber.  Use on some GF toast or try them on the seed cracker recipe that I have posted.   I love a little jam on my toast in the morning with my eggs and a cup of tea or coffee.   You can substitute strawberries or even blackberries but lemon goes so well with the blueberries.  You serve on top come some protein pancakes.

 

 

 

 

 

INGREDIENTS

1 Cup blueberries

2 Tbs lemon juice

3 Tbs chia seeds

DIRECTIONS

In a small sauce pan, combined the blueberries and the lemon juice and cook over medium high heat.  Cook for 5-6 minutes while stirring until the berries start to break down and have release most of their liquid.

Blend using an immersion blender directly in the pot until smooth.  simmer over medium- high heat for 5 minutes until the puree thickens.

Transfer small bowl and stir in the chia seeds.  Let sit for 10 minutes or until cool to serve.  You can store in jar or air tight container for up to 5 days.
