Salsa is a great way to add interest and depth of flavor to your dish with low fat and low carbohydrates. Of course, the tomato salsa is for your Mexican or Latin inspired dishes. The grilled mango salsa goes well with just about any fish dish or even a really spicy grilled chicken dishes. The peach and rosemary salsa goes well with fish, pork and chicken. With the farmers market in abundance of seasonal fruits and vegetables pick up some of these ingredients and give it a twirl.
INGREDIENTS
2 fresh tomatillos, husked and finely chopped
3/4 cup finely chopped yellow tomato
2/3 cup finely chopped Roma tomato
1/4 cup finely chopped red onion
1/4-1/2 cup chopped cilantro (I love cilantro so use more but if you are not a you can limit or omit)
1 lime
1 Serrano chile pepper seeded and finely chopped
pinch of salt
pinch of pepper
DIRECTIONS
Mix all ingredients in a medium bowl and refrigerate for an hour before serving. Taste and add salt and pepper.
Grilled Mango Salsa
INGREDIENTS
2 large mango peeled and sliced 1/4 – 1/2 inch thick
1 large red onion slice 1/2 inch thick
1 jalapeno pepper sliced and seeded
2 tbs parsley
1 lime
1 Tbs olive oil
Salt to taste
DIRECTIONS
Use the olive oil to lightly coast the the mango, onion and pepper. Over a medium heated grill cook them until they have grill marks on all sides. Take off the grill and let them cool and then chop into chunky pieces. Taste and season with salt.
Peach- Rosemary Salsa
INGREDIENTS
1/4 cup grilled chopped peaches
1/4 cup avocado
1 grilled green onion
1/2 tsp to 1 tsp rosemary
1/2 Tbs olive oil
1 tsp agave
1 jalapeno
DIRECTIONS
Slice peaches in 1/2 inch slices, cut the root off the green onion, slice jalapeno in half and remove seeds. cover all them with the olive oil and grill over medium heat until grill marks appear. Remove and dice them up and combine in a small bowl and poor the lemon juice over and stir.
